I knew that there were types based on color, but I had no clue what contributed to their color variations. Eventually, somewhere down the line, I learned that it was due to aging (the Maillard reaction), although, upon further research, it is also due to the type of kojiused (soybean, rice, barley). Saikyo miso (西京味噌) is a particular kind of miso that is very sweet and has a creamy pale colour (see the photo in the post). It might also be sold as “sweet shiro miso” (白味噌, white miso) due to its colour. Super fast for an elegant main dish. While the marination requires a minimum of 2 days, the actual prep time takes only 10 mins and the cook time in the oven 20 mins. All in all, a fuss-free recipe!
